Hey guys! I love creating new and hearty salads to enjoy during the summer months when it’s hot out and I don’t feel like cooking a ton. I always try to pack as much nutrients into every meal and this dish is no exception.

- Asparagus contains Vitamin E a vitamin that helps to strengthen your immune system.
- Avocado ( I personally love avocado and it’s so great for you) contains potassium, healthy fats, Vitamins B6, A, E. Tons of fiber and iron too,
- Baby Kale has calcium plus vitamin C
What you eat and put in your body is so important. SERIOUSLY! Not only will good food give you tons of health benefits it will make you feel great, look better than you do right now and give you more energy to do stuff you love.

1 clove garlic
1/2 tablespoon olive oil
1 /2 bunch chopped asparagus
Juice from 1/2 lemon
Organic Salt Free seasoning
Baby Kale Salad Mix
Let’s Get Cooking
I start with the asparagus first so by the time the rest of my salad is ready, the asparagus is too.
I add fresh garlic and olive oil to a hot pan and toss in some fresh chopped asparagus. I prefere my veggies cooked aldente. Cook over medium heat for 7-10 minutes.
I use an entire avocado chopped into large chunks
Squeeze the juice from half a lemon and add seasoning
I use the Costco Organic Salt Free Seasoning
I pour the chunks of avocado over the baby kale and add the warm garlic asparagus. It’s fresh, harty and delicious. My son loves this salad too and it really keeps up full 🙂
